Description of product typologies
Vin Santo di Carmignano PDO varies from straw-yellow to golden yellow, tending towards intense amber with ageing; the nose is very complex, rich with liqueur fruit and minerals; it is embracing, complex and extremely rich on the palate, offering a persistent fruity aftertaste. Vin Santo di Carmignano PDO Occhio di Pernice ranges from soft pink to intense pink, with orangey hues; the nose offers an embracing, ethereal and fruity fragrances, which open up to reveal a spicy, floral background; it is sweet, smooth and velvety on the palate. Only oenological practices which ensure the product acquires its unique characteristics are permitted in the vinification of Vin Santo wines. This includes the traditional vinification method, which involves the carefully selected grapes being dried naturally in suitable environments, where the use of ventilated air is also permitted. The grapes can only be pressed between December 1st of the harvest year and March 31st of the following year. The storage and ageing of Vin Santo di Carmignano PDO must take place in wooden kegs with a capacity of no more than 300 litres; Vin Santo wines cannot be released for consumption before November 1st of the third year following that in which the grapes were produced; Vin Santo Riserva cannot be released for consumption before November 1st of the fourth year following that in which the grapes were produced.
