Description of product typologies
Vernaccia di Serrapetrona PDO Spumante Rosso is garnet red, often encircled with ruby-red hues, and has effervescent red foam and a fairly fine, persistent perlage; the nose is characterised by sensations of extremely ripe red fruit, jam, dried red flowers and spices; it is semi-sweet, sapid, warm, full-bodied, balanced and persistent on the palate, with velvety tannins and a slightly bitter aftertaste. Vernaccia di Serrapetrona PDO Spumante can also be produced as sweet wine. Only local enological practices are permitted in the vinification of Vernaccia di Serrapetrona PDO, which require that no more than 60% of the grapes, including those originating from complimentary grape varieties, be vinified at the time of the harvest; the remaining grapes, no less than 40% and made up exclusively of the Vernaccia Nera grape variety, must be dried; drying must take place in suitable environments, where the use of ventilation systems is permitted. The must obtained from the lightly dried grapes can either be added to the product deriving from the fresh grapes or fermented before being mixed in. The wine is then carbonated through natural fermentation and cannot be released for consumption before June 30th of the year following that of the grape harvest.
