Description of product typologies
Vernaccia di San Gimignano PDO is vivid straw-yellow, varying in intensity and with golden reflections that become more evident with ageing; the nose is rich, revealing dense notes of wild apple, white flowers, almond, grapefruit and pineapple, which with maturing can evolve into minerally notes; it is dry, smooth and pleasantly acidulous on the palate, with a persistent finish revealing hints of almond. It can display Riserva on the label if the wine has been aged for a minimum period of 11 months, commencing January 1st of the year following that in which the grapes were produced. Before being released for consumption, Vernaccia di San Gimignano PDO Riserva wines must have been matured in the bottle for three months. Grapes destined for the production of Vernaccia di San Gimignano PDO wines must have a minimum natural alcohol level of 10.5% vol.; for Riserva wines the minimum natural alcohol level is 12% vol.
