Description of product typologies
Valpolicella PDO is red, tending towards garnet red with ageing; the nose reveals fragrances of black cherry, cherry, violet and spices, offering an overall complex and balanced smell; there is vibrant freshness on the palate, and a perfect tannic vein if the wine is matured, which together create a warm, smooth taste that leads to a pleasantly persistent finish. It can display Superiore on the label. Before being released for consumption, Valpolicella PDO Superiore wines must have been aged for a mandatory period of at least one year, commencing January 1st of the year following that in which the grapes were produced. The ageing processes of Valpolicella PDO Superiore wines must take place within the production area, or in any case within the territory of the Province of Verona.
Geographical and sub-area specifications
The Valpolicella PDO can be accompanied by two geographical specifications: Valpolicella PDO Valpantena and Valpolicella PDO Classico.
Additional specifications
The Valpolicella PDO designation can be followed by the specification Vigna (Vineyard) with the relative toponym.
