Description
The Turrón de Agramunt PGI is a sweet made with honey and shelled and toasted almonds or hazelnuts, sugar and/or glucose syrup and egg white which is then placed between two wafers.
Production Area
The Turrón de Agramunt PGI is produced in the municipality of Agramunt in the province of Lerida, in the Autonomous Community of Catalonia.
Production Method
The almonds and the hazelnuts are prepared in two different ways: the hazelnuts are toasted and then shelled, while the almonds are shelled and then toasted. A base for the product is prepared separately by heating the honey and the sugar until all the water has been absorbed, with care being taken to stir the mixture at all times. When the mixture has cooled a little, egg whites and hazelnuts or almonds, having been prepared as described above, are added. The mixture is carefully blended and divided into portions and layered onto a fine wafer, formed into a disc shape and topped with a second wafer.
Appearance and Flavour
Turrón de Agramunt PGI comes in rectangular or round cake portions, it is a golden beige colour, with an irregular surface, and it is porous and solid but not really hard. It is very sweet and crunchy but at the same time melts in the mouth.
History
Turrón de Agramunt PGI is a sweet of very ancient origins and it is part of the cultural heritage of the entire area in which it is made. The recipe for Turrón de Agramunt PGI, in fact, has been passed down from generation to generation and is one of the founding elements in the Catalan tradition of sweet making. It is still produced today with the same ingredients and the same way that it always has been.
Gastronomy
Turrón de Agramunt PGI must be stored in a dry place. It is mostly eaten at Christmas time, but it is also used in the preparation of other special dishes. This sweet is used as the main ingredient in biscuits, cakes, ice creams, mousses and desserts in general. It goes very well with sweet wines and sparkling wine.
Marketing
This product is available as Turrón de Agramunt PGI. It is sold in two versions: Turrón de Agramunt PGI Superiore, which contains a minimum of 60% hazelnuts or almonds and Turrón de Agramunt PGI Extra, which contains a minimum of 46% hazelnuts or almonds. It is sold in single pieces of various weights or in packs of ten.
