Description of product typologies
Trento PDO Spumante Bianco is straw-yellow, varying in intensity, and has a fine, persistent perlage; the nose reveals fruity fragrances of apple, citrus fruit and tropical fruit, accompanied by hints of white flowers, bread crust and biscuity notes; it is fresh and sapid on the palate, with faint toasted aromas and a slightly almondy sensation. It can display Riserva on the label if the wine has remained on the lees for at least 36 months. Trento PDO Spumante Rosé is pink, varying in depth, and has a thin perlage; the nose opens with hints of almond which immediately give way to notes of grapefruit, strawberry and orange, with traces of peony; it is fresh, smooth and creamy on the palate, with aromas of fruit and pastries. It can display Riserva on the label if the wine has remained on the lees for at least 36 months. Grapes destined for the production of Trento PDO wines must ensure a minimum natural alcohol level of 9% vol. and 10% vol. for Riserva wines. Only the Classico Method of secondary fermentation in the bottle, including shaking (remuage) and disgorgement (dégorgement), is permitted for the production of Trento PDO sparkling wines. The production process includes a minimum period of 15 months on the lees, and 36 months for Riserva wines. This period commences from the bottling date and in any case, not before January 1st of the year following that of the grape harvest.
Additional specifications
Trento PDO Spumante and Trento PDO Spumante Rosé wines which have remained on the lees for at least 24 months, can indicate the year in which the grapes were produced on the label.
