It can also be produced as medium-sweet or semi-sparkling wine. Toscana PGI or Toscano PGI Rosso, alone or with specification of grape variety, is ruby red, tending towards garnet red with ageing; the nose reveals lively floral and fruity aromas which tend to become more complex with maturation and based on the percentage of the grape varieties used; it is fresh and smooth on the palate, with varying structure and persistence depending on the age of the wine. It can also be produced as medium-sweet, semi-sparkling and Novello wine. Toscana PGI or Toscano PGI Rosato, alone or with specification of grape variety, is soft pink; the nose reveals floral fragrances with notes of small red fruit; it is lively, fresh, smooth and balanced on the palate, ranging from dry to sweet. It can also be produced as medium-sweet or semi-sparkling wine. Toscana PGI or Toscano PGI Passito, alone or with specification of grape variety, is deep straw-yellow to golden yellow if the wine is produced from white grapes, tending towards dark brown for those made with red grapes; the nose bursts with evident notes of exotic fruit and jam; it is full and rounded on the palate, without any evident tartness, with well-balanced tannins. Toscana PGI or Toscano PGI Vendemmia Tardiva, alone or with specification of grape variety, ranges from deep straw-yellow to golden yellow; the nose offers fragrances of ripe fruit, jam and honey; it is rounded on the palate, well-balanced between sweet and tart. The use of “governo all’uso toscano” (a Tuscan vinification technique) is permitted in the production of Toscana PGI or Toscano PGI wines, which consists of the secondary fermentation of the wine through the addition of slightly dried red grapes; the grapes must not exceed 5 kg per hectolitre.
