The Todi PDO is reserved for the following types of wine: White and Red; Passito (only with specification of grape variety). The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Todi PDO is within the entire territory of the municipalities of Todi, Massa Martana, Monte Castello di Vibio and Collazzone in the Province of Perugia, in the Umbria region.
Description of product typologies
Todi PDO Bianco is pale straw-yellow in colour and mottled with green; the nose displays evident fragrances of caramelised pineapple and banana that are accompanied by sensations of aromatic herbs and vanilla; it is smooth and balanced on the palate. Todi PDO Rosso has a limpid ruby-red colour; the nose is rich with sensations of black cherry and cranberry, violet and brushwood; the lively tannins on the palate blend harmoniously with fruitiness and sapidity. It can display Superiore on the label if the wine has been aged for 12 months, commencing November 1st of the year in which the grapes were produced. Todi PDO Passito with specification of grape variety has the organoleptic properties that are typical of the grapes and terroir of origin.
Grape variety specifications
The Todi PDO may display the following grape variety specifications. From white grape varieties (incl. Superiore, Passito): min. 85% Grechetto (or Grechetto di Todi), pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. From red grape varieties (incl. Superiore): min. 85% Merlot (or Merlot di Todi), Sangiovese, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Todi PDO Sangiovese and Todi PDO Merlot wines must be aged for a period of 12 months, commencing November 1st of the grape harvest; to qualify as Superiore wines they must be aged for a further six months. Todi PDO Grechetto Superiore wine must be aged for five months, commencing November 1st of the of the grape harvest. Todi PDO Grechetto Passito wine must be produced with grapes that have been dried on the vines or in suitable environments with natural ventilation or condition systems, excluding those with heating. The wine must be aged for 10 months, commencing November 1st of the year in which the grapes are produced.
