Description
The Terre Tollesi PDO or Tullum PDO is reserved for the following types of wine: Red, Red Riserva and White (only with specification of grape variety). The Designation also incorporates two grape variety specifications.
Production Area
The production area of Terre Tollesi PDO or Tullum PDO is within the entire territory of the municipality of Tollo in the Province of Chieti, in the Abruzzo region.
Description of product typologies
Terre Tollesi PDO or Tullum PDO Rosso is ruby red with faint purple reflections; the nose bursts with sensations of pansy, cherry, blueberry, liquorice, vanilla, spices and tobacco; it is dry and harmonious on the palate, pleasantly tannic and medium to full-bodied. Terre Tollesi PDO or Tullum PDO Rosso Riserva is intense ruby red, tending towards garnet; the nose is intense, ethereal and characteristic, with hints of ripe red fruit like cherry, black cherry and blackberry, jams, accompanied by hints of vanilla and spices; it is dry, full-bodied, harmonious and velvety on the palate. Terre Tollesi PDO or Tullum PDO Rosso Riserva wines must have been aged for a minimum period of 2 years, commencing January 1st of the year following that in which the grapes were produced, of which at least six months must be in wooden barrels. Grapes destined for the vinification of Terre Tollesi PDO or Tullum PDO Rosso wines must guarantee a minimum total natural alcohol level of 13% vol., and 13.5% vol. for Riserva wines. The organoleptic properties of Terre Tollesi PDO or Tullum PDO Bianco are typical of the grapes and terroir of origin.
Grape variety specifications
The Terre Tollesi PDO or Tullum PDO may display the following grape variety specifications. From white grape varieties: min. 90% Pecorino, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 10%; min. 90% Passerina, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 10%. Terre Tollesi PDO or Tullum PDO Pecorino is straw-yellow, varying in intensity; the impact on the nose is light, characteristic and fruity, with hints of pear, apple, white peach and almond, accompanied by vegetal hints of sage and lavender; it is dry, harmonious and persistent on the palate, with good acidity. Terre Tollesi PDO or Tullum PDO Passerina is straw-yellow, varying in intensity; the nose is characteristic and fruity, with hints of citrus fruit, white peach, almond and elderflower; it is dry and harmonious on the palate, with good acidity, leading to an almondy finish. Terre Tollesi PDO or Tullum PDO wines with the specification of a white grape variety cannot be released for consumption before January 1st of the year following that of the grape harvest.
