The production area of Tavoliere delle Puglie PDO or Tavoliere PDO is within the territory of numerous municipalities in the provinces of Foggia and Barletta-Andria-Trani, in the Apulia region.
Description of product typologies
Tavoliere delle Puglie PDO or Tavoliere PDO Rosso is ruby red, varying in intensity, at times with reflections tending towards garnet red; the nose bursts with fruity notes of small berries, blackberry and cassis, supported by spiciness and leather; it is smooth, warm and embracing on the palate, with a dense sensation of tannins. It can display Riserva on the label if the wine has been aged for a minimum period of 2 years, of which at least 8 months must be in wooden barrels; the ageing period commences November 1st of the year in which the grapes were produced. Tavoliere delle Puglie PDO or Tavoliere PDO Rosato is pink, varying in intensity; the nose offers fragrances of flower petals, rose and pansy, accompanied by hints of fresh fruit and a delicate spiciness; it is fresh, sapid and delicately fruity on the palate.

Grape variety specifications
The Tavoliere delle Puglie PDO or Tavoliere PDO may display the following grape variety specifications. From red grape varieties (incl. Riserva): min. 90% Nero di Troia, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 10%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Before being released for consumption, Tavoliere delle Puglie PDO or Tavoliere PDO Nero di Troia Riserva wine must be aged for a mandatory period of at least 2 years, of which a minimum of 8 months must be in wooden barrels; the ageing period commences November 1st of the year in which the grapes were produced.
