Description
The Strevi PDO is reserved exclusively for Passito wine.
Production Area
The production area of Strevi PDO is within the entire territory of the municipality of Strevi in the Province of Alessandria, in the Piedmont region.
Description of product typologies
Strevi PDO is golden yellow, varying in intensity, with amber reflections; the nose reveals fragrances ranging from flowers to fresh fruit, and from dried fruit to honey; it is sweet, mellow and aromatic on the palate, with a predominant taste of ripe fruit. If the wine is stored in wooden recipients, the flavour might display light woody hints. Grapes destined for the vinification of Strevi PDO wine must have been sun-dried gradually outdoors in crates or on trellises, in closed, ventilated environments, or in air-conditioned rooms, without heating the grapes or the room. When harvested, the grapes must ensure a minimum natural alcohol level of 12% vol. Strevi PDO wines can only be released for consumption after having been matured and aged for a minimum period of two years, commencing October 1st of the year in which the grapes were produced. The vinification, maturing, mandatory ageing and bottling processes must take place within the territory of the municipality of Strevi or the bordering municipalities (Acqui Terme, Cassine, Morsasco, Orsara Bormida, Ricaldone, Rivalta Bormida and Visone).
