The Soave PDO is reserved for the following types of wine: White and Spumante. The Designation also incorporates one geographical specification.
Production Area
The production area of Soave PDO is within the entire territory or parts of the municipalities of Soave, Monteforte d’Alpone, San Martino Buon Albergo, Mezzane di Sotto, Roncà, Montecchia di Crosara, San Giovanni Ilarione, San Bonifacio, Cazzano di Tramigna, Colognola ai Colli, Caldiero, Illasi and Lavagno in the Province of Verona, in the Veneto region.
Description of product typologies
Soave PDO Bianco is straw-yellow, at times tending towards greenish-yellow; the nose reveals fruity notes, especially of medlar, yellow apple and tropical fruit, alternated with aromas of chamomile flowers, elderberry, lime and citrus peel; it is dry, medium-bodied, harmonious and slightly bitter on the palate. It can display Classico on the label. Soave PDO Spumante is bright straw-yellow, at times with greenish reflections; the nose is rich, revealing vegetal and fruity notes blending with hints of yeasts and bread crust; the flavour offers a harmonious structure, with a good acid vein that reflectionsthe freshness. Soave PDO Spumante must be obtained exclusively through natural secondary fermentation. The production processes for Spumante wines must take place within the Veneto region. The vinification of the grapes destined for the production of Soave PDO wines can be carried out throughout the entire territory of the Province of Verona and in the administrative territory of the municipalities of Gambellara and Montebello, in the province of Vicenza. Soave Protected Designation of Origin wines cannot be released for consumption before December 1st of the harvest year; Soave PDO Classico and Soave PDO wines with the geographical specification Colli Scaligeri can be released for consumption from February 1st of the year following that in which the grapes were harvested.
Geographical and sub-area specifications
The Soave PDO can be accompanied by the geographical designation Soave PDO Colli Scaligeri, which is reserved exclusively for white wines produced with the same blends as Soave PDO. Soave PDO wines may refer to 33 additional smaller geographical units located within the same production area, provided that the product is vinified separately and specifically declared in the annual grape production report.
Additional specifications
The Soave PDO, Soave PDO Classico and Soave PDO Colli Scaligeri designations can be followed by the specification Vigna (Vineyard) with the relative toponym. It is mandatory for Soave PDO Classico and Soave PDO Colli Scaligeri wines to indicate the year the grapes were produced in on the label.
