Description
The Sierra Mágina PDO extra virgin olive oil is made principally from the Picual variety of olive with the addition of the Manzanillo de Jaén variety included in the Olea europea L. varieties.
Production Area
The production area of Sierra Mágina PDO extra virgin olive oil is in a protected Natural Park in the centre of the province of Jaén which gives its name to the oil, in the Autonomous Community of Andalusia.
Production Method
The density of the trees in the orchards varies form 90 to 120 trees per hectare. The olives are transported to the mill, prepared and pressed within a period of 48 hours. Finally, the oil is decanted.
Appearance and Flavour
Sierra Mágina PDO extra virgin olive oil is very stable oil, slightly bitter and decidedly fruity. The colour varies from an intense green to a golden yellow, depending on the time of the harvest.
History
The Sierra Mágina PDO extra virgin olive oil is obtained from olive groves which have been the main font of the economical activity of the territory for a long time. Confirmation of this is seen by the testimonies left by the population which have inhabited the area since the Prehistoric age.
Gastronomy
Extra virgin olive oil is easily degradable and must be stored correctly to maintain its organoleptic qualities. It should therefore be kept in a cool, dark place at a temperature between 14 and 18°C, away from sources of heat and away from other foods which produce odours. It should be used within four to six months of pressing to enjoy its flavour at its best. If it is stored correctly, it can be kept for up to a year. It is recommended that it be used between four and six months of its pressing to enjoy it at its very best. Sierra Mágina PDO extra virgin olive oil is ideal as a condiment or ingredient in many recipes. It is excellent on salads and vegetables and on meat and fish dishes.
Marketing
The product is sold as Sierra Mágina PDO. It is sold in glass bottles only of 0.25, 0.5, 0.75 and 1 l sizes.

The olive orchards which provide the olives for Sierra Mágina PDO extra virgin olive oil are 850 metres above sea level and the particular characteristics of the soil give this oil its unique quality.
