Production Method
The lambs from which Shetland Lamb PDO is produced are reared on the rich and abundant natural vegetation of the pastures in the production area. The lambs are slaughtered at one year of age. Pure bred Shetland lambs must weigh between 7 kg and 14 kg and cross breeds must weigh at least 20 kg.
Appearance and Flavour
Shetland Lamb PDO is tender and succulent and fairly red in colour with fine lines of white fat. The flavour and texture of the lamb from the Shetland breed varies slightly from that produced by the cross breed.
