Description
Sebreljski Zelodec PGI is a preserved sausage made from high-quality pork meat and hard bacon which is smoked and matured.
Production Area
Sebreljski Zelodec PGI is produced in the Idrijsko-Cerkljansko area, to the west of the Goriska region.
Production Method
Meat from the thigh, shoulder, neck and back is minced into 8-10 mm pieces and the hard bacon from the thigh, shoulder and back is cut into pieces of 6 to 8 mm: the meat to bacon ratio is between 75:25 and 80:20. The minced meat and bacon are mixed together with garlic, salt, pepper and sugar; the use of nitrates, nitrites and other additives is not permitted. The filling is mixed and stuffed into casings, such as pigs' bladders, beef rectums or artificial casings, which are then sewn or tied shut. The product is then drained and pressed for a maximum of 10 days, after which it is cold-smoked for up to two days. The drying and maturation process takes place in natural conditions or in an air- conditioned environment, with a temperature of between 10 °C and 15 °C, and the relative humidity must be between 60 % and 80 %: this process lasts from three to five months depending on the weight of the product. The rooms are ventilated naturally by the occasional opening of windows.
Appearance and Flavour
Sebreljski Zelodec PGI is flat and its shape depends on which casing is used. Its weight varies from 800 gr to 2 kg. The surface is smooth and dry and it has the harmonious taste of matured meat and bacon, with undertones of seasoning; the aroma is characteristic with notes of spices and smoke.
History
Sebreljski Zelodec PGI is most likely a traditional product of the Goriska region, although there are few written records to prove it. Only a survey of the older population which was carried out in the geographical area has confirmed the long tradition of producing Sebreljski zelodec with high-quality ingredients and traditional methods.
Gastronomy
Sebreljski Zelodec PGI should be kept in a dark, cool place, at a relatively low temperature. It can be eaten on its own, on a slice of buttered bread or together with cheeses and pickled vegetables. It is ideal served with a good red wine.

The product is marketed as Sebreljski Zelodec PGI. It may be sold fresh, vacuum-packed or in packed in a modified atmosphere.
Distinctive Features
The climatic conditions of the production area most definitely contribute to the specific qualities of Sebreljski Zelodec PGI, especially during the drying and maturing stages: the constant circulation of air in the valley is induced by the difference in temperature between the sunny and shady areas, which determines the suitable relative humidity.
