Description
The Schwäbisch-Hällisches Qualitätsschweinefleisch PGI is the meat obtained from a domestic pig race, in which the male pigs are 90 cm tall, weigh between 275 and 330 kg, while the females are 80 cm tall, and weigh 222-275 kg. The head, the neck and the hind legs are black, while the forelegs and the body are not pigmented.

Production Method
The pigs are bred in luminous and ventilated stables, in which fresh straw is constantly placed. In some farms, the animals are free to graze. During the fattening period, the swine are nourished with cereals, vitamins and supplementary fodder. Only fodder coming from the production area is given to the animals. After the slaughter, the meat is directly distributed to the specialised stores.

History
The existence of the race, from which the Schwäbisch-Hällisches Qualitätsschweinefleisch PGI is made, is already documented since the period of King Wilhelm I of Württemberg, who imported the Sus scrofa vitattus in 1820 to crossbreed it with the local wild boars. Around 1840, the new race became popular and then spread significantly around the middle of the 20th century, when it actually covered almost the entire swine population in the Hohenlohe region.
