The San Torpè PDO is reserved for the following types of wine: White, Rosé and Vin Santo. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of San Torpè PDO is within the territory of numerous municipalities in the Province of Pisa, in the Tuscany region.
Description of product typologies
San Torpè PDO Bianco straw-yellow, varying in intensity; the nose displays lively fragrances with dense notes of flowers and ripe white fruit; it is dry, harmonious and delicate on the palate, with a long finish and a fruity aftertaste. San Torpè PDO Rosato ranges from soft pink to cherry pink; the nose is fresh, with almost sweet-like red fruity fragrances; it is dry, fresh and harmonious on the palate. San Torpè PDO Vin Santo ranges from golden to intense amber; the nose reveals fragrances rich with ripe and dried fruit and sweet spices, with notes of minerals and alcohol; the flavour ranges from dry to sweet, an is warm, harmonious and velvety with a characteristic aftertaste, revealing a more pronounced roundness in the slightly sweet wine. It can display Riserva on the label. Grapes which are suitable for producing San Torpè PDO wine can also be used to make Vin Santo if they have been carefully selected and dried in suitable environments until they reach a minimum sugar content of 26%; the grapes can only be mashed between December 1st of the harvest year and March 31st of the following year. The grapes can be partially dehydrated with ventilated air; storage and ageing must take place in suitable environments, in wooden kegs with a maximum capacity of 2.25 hectolitres; the wine cannot be released for consumption before November 1st of the third year (fourth year for Riserva wines) following that in which the grapes were produced.

The San Torpè PDO designation can also be accompanied by additional geographical specifications referring to municipalities, districts, and localities within the production area and from where the grapes used to produce the wine effectively originate.
Grape variety specifications
The San Torpè PDO can display the following grape variety specifications: From white grape varieties: min. 85% Chardonnay, Sauvignon, Trebbiano, Vermentino, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the Tuscany region, max. 15%.
Additional specifications
The San Torpè PDO designation can be followed by the specification Vigna (Vineyard) with the relative toponym.
