The San Severo PDO is reserved for the following types of wine: White, Red, Rosé, Spumante and Novello. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of San Severo PDO is within the territory of numerous municipalities in the Province of Foggia, in the Apulia region.
Description of product typologies
San Severo PDO Bianco has an intense straw-yellow colour; the nose displays intense floral notes of bramble, as well as notes of hay and white fruit and sensations of aromatic herbs; it is dry on the palate and rich with flowers and aromas of herbs and green grass. It can also be produced as Semi-Sparkling wine. San Severo PDO Rosso has a ruby-red colour, tending towards garnet with ageing; the intensity of red fruit on the nose is followed by sweet spicy sensations and hints of cocoa and pepper; it is warm, mellow and smooth on the palate, rich with smooth tannins and with a deep fruity finish. It can also be produced as Semi-Sparkling wine and can display Riserva on the label. San Severo PDO Rosé varies from cherry to coral-pink in colour; the delicate fruity fragrances of the nose alternate with intense floral aromas and aromatic sensations; it is fresh and sapid on the palate, with a long fruity finish. San Severo PDO Spumante has a fairly bright straw-yellow colour, varying in intensity and a fine and persistent perlage; the nose is fruity, delicate and intense at the same time; it is fresh on the palate, with a harmonious structure and a well-shaped acid backbone. San Severo PDO Novello is ruby red in colour with purple highlights; the nose is vinous, rich with red fruit and is fairly intense; it is fresh and harmonious on the palate, with a good level of acidity. San Severo PDO Rosso Riserva and San Severo PDO Rosso Riserva with specification of grape variety can be released for consumption 18 months after December 1st of the year in which the grapes were harvested.
Grape variety specifications
The San Severo PDO may display the following grape variety specifications. From white grape varieties: min. 85% Bombino Bianco (incl. Semi-Sparkling, Spumante), Malvasia Bianca di Candia, Trebbiano Bianco, Falanghina, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. From red grape varieties: min. 85% Merlot (incl. Rosé), Uva di Troia or Nero di Troia (incl. Riserva and Rosé), Sangiovese (incl. Rosé), pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin.
