The Salento PGI is reserved for the following types of wine: White, Red, Rosé, Spumante, Spumante Rosé, White Passito, Red Passito, White Uve Stramature (Overripe Grapes), Red Uve Stramature, Red Novello and Rosé Novello. The Indication also incorporates numerous grape variety specifications.
Production Area
The production area of Salento PGI is within the entire territory of the provinces of Brindisi, Lecce and Taranto, in the Apulia region.
Description of product typologies
Salento PGI Bianco, alone or with specification of variety, has a straw-yellow; the nose is delicate, with strong floral and fresh fruity notes; it is fresh and fruity on the palate and ranges from dry to medium-sweet. It can also be produced as Semi-Sparkling wine. Salento PGI Rosso, alone or with specification of grape variety, varies from ruby-red to garnet in colour; the nose reveals characteristic fragrances of red fruit and flowers and is sapid with spicy notes; the palate ranges from dry to medium-sweet and is harmonious, mellow, warm and smooth. It can also be produced as Semi-Sparkling wine. Salento PGI Rosé, alone or with specification of grape variety, is pink in colour; the nose reveals characteristic aromas of fresh fruit; it ranges from dry to medium-sweet on the palate with a fruity sweet and fresh flavour. It can be produced as Semi-Sparkling wine. Salento PGI Spumante, alone or with specification of variety, has a straw-yellow colour, at times with golden highlights, and a fine and persistent perlage; the nose is fragrant and complex with characteristics notes of secondary fermentation; it is balanced, fresh, sapid and harmonious on the palate. Salento PGI Spumante Rosé, alone or with specification of grape variety, is pink in colour, with fine and persistent foam; the nose is fragrant, complex and characteristic of secondary fermentation; it is fresh, fine and harmonious on the palate. Salento PGI Passito Bianco, alone or with specification of grape variety, ranges from straw-yellow to golden in colour; the nose offers delicate and persistent fragrances of ripe fruit; the palate is variable, ranging from dry to sweet, and is balanced and typical. Salento PGI Passito Rosso, alone or with specification of grape variety, is ruby-red in colour, tending towards garnet with ageing; the nose is delicate and persistent; the palate is variable, ranging from dry to sweet, and is well-balanced. Salento PGI Uve Stramature Bianco, alone or with specification of grape variety, is straw-yellow to golden in colour; the nose is delicate with persistent aromas; it ranges from dry-to-sweet on the palate, with notes that are typical of ageing. Salento PGI Uve Stramature Rosso, alone or with specification of grape variety, is ruby-red in colour, tending towards garnet with ageing; the nose is characteristic, delicate and persistent; it is harmonious on the palate, ranging from dry to sweet. Salento PGI Novello Rosso, alone or with specification of variety, is ruby-red in colour; the nose is intense, pleasing and characteristic of red fruit; the fruity sensations of the nose return on the palate, with a dry or medium-sweet flavour. Salento PGI Novello Rosé, alone or with specification of variety, is pink in colour; the nose reveals the fruity notes of a young wine.
Grape variety specifications
The Salento PGI with the specification of one of the grape varieties suitable for cultivation in the provinces of Brindisi, Lecce and Taranto, is reserved for wines that are obtained from grapes originating from vineyard compounds, in a business environment, for at least 85% of the corresponding grape variety. Grapes similar in colour and originating from grape varieties different to those specified and suitable for cultivation in the concerned area, max. 15%, can contribute, pure or combined, to the production of the above-mentioned musts and wines. Salento PGI with specification of grape variety can also be produced in the following types of wine: Semi-Sparkling; Spumante, limitedly for the specification of a white grape variety; Passito; Novello, limitedly for red grapes. Salento PGI wines can also be produced with Overripe Grapes coming from the late harvest. Qualified wines with specification of one of the black grape varieties can also be produced as Rosé. Salento PGI wines with specification of grape variety must display the organoleptic properties of the grape variety, as well as the indicated characteristics for the typology of wine.
