Description
The Salchichón de Vic PGI is a sausage product taken from the meat and lard of swine sprinkled with salt and pepper.
Production Area
Salchichón de Vic PGI can be produced in the Community of Plana de Vic, in the area of Osona, the Province of Barcelona, in the Autonomous Community of Catalonia.
Production Method
The first phase of production consists of sorting the meat and the lard to use. The mincing then follows, and the meat is left to refrigerate for 48 hours. After this time the ingredients are mixed, the best meat, the fat and the other components. The resulting mix is fed into the intestines and seasoned for at least 45 days preferably in the dark. The length of the seasoning depends on the weight; it is necessary to dehydrate the product to conserve it over time.
Appearance and Flavour
Salchichón de Vic PGI has a cylindrical shape, an off-white external colour due to the mould and a red internal colour with visible pieces of pepper and lard. The flavour is intense due to the mould and the yeasts present within.
History
Salchichón de Vic PGI has its origins in the 4th century, but historic references are more numerous during the first half of the 15th century. In ancient times this product was created as described above, which allowed for the preservation of the meat. This process was and it is still possible thanks to the climatic conditions of the area.
Gastronomy
Salchichón de Vic PGI should be kept in a dry, well-ventilated area and eaten within six months. It is eaten sliced or in small pieces as an appetiser or as a key ingredient in many dishes. Salchichón de Vic PGI goes well with red wine. Many dishes can be made from this product, such as side dishes and main courses, but the traditional way of eating it is just with bread.

The product is sold as Salchichón de Vic PGI. Salchichón de Vic PGI is sold whole in 800 gr pieces, 600 gr pieces and 400 gr pieces, wrapped in paper or cellophane.
