The Salaparuta PDO is reserved for the following types of wine: White, Red and Novello. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Salaparuta PDO is within the territory of the municipality of Salaparuta in the Province of Trapani, in the Sicily region.
Description of product typologies
Salaparuta PDO Bianco is straw-yellow, varying in intensity; the nose reveals an intense bouquet of wild flowers, apple and peach; it is structured, harmonious and rich on the palate, with persistent floral notes. Salaparuta PDO Rosso is an intense ruby red colour; the nose is fine, with a decisive aroma of berries, balsamic undertones and more complex notes of chocolate; it is spicy, dry, harmonious and structured on the palate. It can display Riserva on the label if the wine has been aged for a minimum period of 2 years, commencing November 1st of the year in which the grapes were produced, of which at least 6 months must be in wooden recipients. Salaparuta PDO Novello is ruby red; the nose is intense with dense notes of raspberry and blackcurrant; it is sapid and smooth on the palate, with persistent fruity undertones.
Grape variety specifications
The Salaparuta PDO may display the following grape variety specifications. From white grape varieties: min. 85% Inzolia, Grillo, Catarratto, Chardonnay, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%, with the exclusion of Trebbiano Toscano. From red grape varieties (including Riserva): min. 85% Cabernet Sauvignon, Nero d’Avola, Merlot, Syrah, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Salaparuta PDO red wines with specification of grape variety qualify as Riserva if they have been aged for a minimum of two years, commencing November 1st of the year in which the grapes were produced, of which at least 6 months must be in wooden recipients.
