Production Area
The production area of Recioto di Soave PDO is within the entire territory or parts of the municipalities of Soave, Monteforte d’Alpone, San Martino Buon Albergo, Mezzane di Sotto, Roncà, Montecchia di Crosara, San Giovanni Ilarione, Cazzano di Tramigna, Colognola ai Colli, Caldiero, Illasi and Lavagno in the Province of Verona, in the Veneto region.
Description of product typologies
Recioto di Soave PDO Bianco (Dolce) is golden yellow to amber; the nose offers fragrances of sultana, acacia honey, dried fig, vanilla and toasted almond; it is intense, persistent, velvety and full-bodied on the palate, with a long and slightly bitter finish. It can display Classico on the label. Recioto di Soave PDO Spumante is golden yellow, varying in intensity, and has a fine, persistent perlage; the nose is rich with vanilla, almond, honey and freshly baked bread; it is full-bodied, sweet and velvety on the palate, with traces of vanilla and toasted almonds. The grapes destined for the production of Recioto di Soave wines are hand-picked and only the best bunches are selected; they are then dried on trellises and controlled regularly for damage. Fermentation takes place in small barrels; the wine is matured in wood and left to age in the bottle for a period of between one to six months. The grapes may also be dried with the aid of air-conditioning systems, on the condition that they operate at a similar temperature to that found during traditional drying processes.
