The Puglia PGI is reserved for the following types of wine: White, Red, Rosé, Spumante, Spumante Rosé, White Passito, Red Passito, Uve Stramature White (overripe Grapes), Uve Stramature Red, Red Novello and Rosé Novello. The Indication also incorporates numerous grape variety specifications.

Description of product typologies
Puglia PGI Bianco, alone or with specification of grape variety, is straw-yellow, varying in depth and at times with fairly intense golden reflections; the nose offers varying degrees of fruity fragrances depending on the grape variety used, with predominant aromas of yellow flowers and white fleshy fruit; it is dry, fresh and slightly fruity on the palate, with good balance between alcohol and acidity and a remarkably clean finish. It can also be produced as a semi-sparkling wine. Puglia PGI Rosso, alone or with specification of grape variety, is ruby red, acquiring garnet red hues with ageing; the nose offers characteristic fragrances of red fruit, traces of spices and aromatic herbs, and an aromatic complexity deriving from the grape varieties used, in which it is often possible to detect tobacco, leather, hints of brushwood and sensations of minerality; the palate boasts a harmonious structure, a perfect balance between alcohol and acidity and a tannic vein that leads to a long, persistent finish. It can also be produced as a semi-sparkling wine. Puglia PGI Rosato, alone or with specification of grape variety, varies from pale pink to a fairly decisive onion-skin pink; the nose offers characteristic fragrances of fresh fruit and flowers, with balsamic sensations which are often predominant; it is balanced and harmonious on the palate, corresponding with the fruity sensations and balsamicity of the nose, with the characteristics of the grape varieties of origin. It can also be produced as a semi-sparkling wine. Puglia PGI Spumante, alone or with specification of grape variety, is straw-yellow, at times with golden reflections, and has a fine, persistent perlage; the nose is fragrant and complex, with aromas that are typical of secondary fermentation in the bottle and sharp hints of apple, pear and yeasts which entwine with traces of medicinal herbs; it is fresh, fine, balanced and harmonious on the palate, and tends to be slightly sweet. Puglia PGI Spumante Rosé is bright pink, with a very fine and continuous perlage and light, persistent foam; the nose is complex with a fragrance of red fruit, offering sensations of roses and bread crust; it is fresh and sapid on the palate, ranging from harmonious to mouth-filling, with a very appreciable persistent finish. Puglia PGI Passito Bianco is straw-yellow to golden yellow with amber reflections; the nose displays characteristic, delicate and persistent fragrances, with hints of roasting, nougat, dried fig, butter and small dry pastries; it is embracing, velvety and extremely balanced on the palate, and not cloying. Puglia PGI Passito Rosso, alone or with specification of grape variety, is ruby red, tending towards garnet red with ageing; the nose is characteristic and delicate, yet decisive and persistent at the same time, with fruity notes of liqueur fruit, in particular cherry and sour cherry; it is balanced and harmonious on the palate, ranging from sweet to dry. Puglia PGI Uve Stramature Bianco, alone or with specification of grape variety, is straw-yellow to golden yellow; it is delicately fruity and persistent on the nose, with sharp undertones of honey-based desserts; it is harmonious on the palate, with typical notes of dried fruit and a long, persistent finish. Puglia PGI Uve Stramature Rosso, alone or with specification of grape variety, is ruby red, tending towards garnet red with ageing; the aromas are delicately characteristic and persistent; the notes of the nose return on the palate with a pleasant balance between sweet and dry. Puglia PGI Novello Rosso, alone or with specification of grape variety, is ruby red, varying in intensity; the nose is pleasant, with aromas of red fruit; it is lively and characteristic on the palate, with a good acid backbone that determines the freshness of this wine. Puglia PGI Novello Rosato, alone or with specification of grape variety, is pink, varying in intensity; the nose bursts with delicate fruity notes; it is harmonious on the palate, ranging from dry to medium-sweet. Grapes destined for the production of Puglia PGI Passito and Uve Stramature wines can be dried on the vines.
Grape variety specifications
The Puglia PGI with the specification of one of the grape varieties suitable for cultivation in the concerned area, is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of at least 85% of the corresponding varieties. A maximum of 15% of similarly-coloured grapes originating from other grape varieties different from the one specified and suitable for cultivation in the concerned area can be used, pure or combined, to produce the above-mentioned musts and wines. Puglia PGI wines with specification of grape variety can also be produced as: Frizzante; Spumante, only with the specification of a white grape variety; Passito; Novello only with the specification of a red grape variety. Puglia PGI wines with specification of grape variety can also be produced as wine made from overripe grapes and can display Vendemmia Tardiva on the label. Wines with the specification of one of the black grape varieties can also be produced as Rosé; the Lambrusco (Lambrusco Maestri) and Negroamaro grape varieties can be vinified with white vinification methods. Puglia PGI wines may refer to the names of two grape varieties on the condition that the wine derives entirely from the specified varieties and that there is no more than 15% of the minor variety. Puglia PGI wines with specification of grape variety must display the organoleptic properties of the specified grape variety, as well as the specific characteristics indicated for wines of the same colour.
