Description of product typologies
Provincia di Pavia PGI Bianco, alone or with specification of variety, is straw-yellow; the nose offers intense fragrances of lime, kiwi and almond; it is fresh, lively and energetic on the palate, with a persistent fruity finish ranging from dry to sweet. It can also be produced as a semi-sparkling wine. Provincia di Pavia PGI Rosso, alone or with specification of variety, is ruby red; the nose offers slightly aromatic sensations, fruity hints of blackcurrant and sour cherry, and traces of pepper and brushwood; it is smooth and lively on the palate, ranging from dry to sweet, with good structure and persistence. It can be produced as a semi-sparkling wine. Provincia di Pavia PGI Rosato, alone or with specification of variety, ranges from pale pink to cherry-pink; the nose is fruity, intense and persistent; the palate displays characteristic notes, at times lively, ranging from dry to sweet. It can also be produced as a semi-sparkling wine. Provincia di Pavia PGI Passito Bianco varies from yellow to amber; the nose bursts with intense fruity notes; it is balanced, sweet and full on the palate. Provincia di Pavia PGI Passito Rosso is red, varying in intensity and tending towards garnet red; the nose is intense and characteristic; it is harmonious, sweet and velvety on the palate. Provincia di Pavia PGI Novello, alone or with specification of grape variety, is ruby red; the nose offers fruity notes and evolving primary aromas; it is harmonious on the palate, at times lively, ranging from dry to medium-sweet. The colour of Provincia di Pavia PGI wines must correspond with the colour of the grape, with the exception of Pinot Nero, which can be vinified with red or white winemaking methods, and Pinot Grigio, which can be vinified with rosé or white winemaking methods. Wines which specify the name of the grape variety cannot be produced as Passito or Sweet wines, with the exception of Croatina, Malvasia, Moscato and Riesling.
Grape variety specifications
The Provincia di Pavia PGI with the specification of one of the grape varieties suitable for cultivation in the concerned area, is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of at least 85% of the corresponding varieties. A maximum of 15% of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the Lombardy region can be used, pure or combined, to produce the above-mentioned musts and wines. Provincia di Pavia PGI wines with specification of one of the grape varieties can also be produced as a semi-sparkling wine and, exclusively for red wines, Novello. Provincia di Pavia PGI wines with specification of grape variety must display the organoleptic properties of the specified grape variety, as well as the specific characteristics indicated for wines of the same colour.
