Description
The Prosecco PDO is reserved for the following types of wine: Prosecco, Semi-Sparkling Prosecco, Spumante Prosecco and Rosé Spumante Prosecco. The Designation also incorporates two geographical specification.
Production Area
The production area of Prosecco PDO is within the entire territory of the provinces of Gorizia, Pordenone, Trieste and Udine in the Friuli Venezia Giulia region, and the provinces of Belluno, Padua, Treviso, Venice and Vicenza, in the Veneto region.
Description of product typologies
Prosecco PDO is straw-yellow; the nose displays delicate floral and fruity notes; it is full and fresh on the palate, with a perfect balance between tart and sugary sensations. Prosecco PDO Frizzante is straw-yellow, varying in intensity, sparkling and with an evident development of bubbles; it is delicate and characteristic on the nose, with notes of yellow apple and exotic fruit; it is dry, fresh and slightly lively on the palate. Prosecco PDO Spumante is straw-yellow, varying in intensity, and has a fine, consistent perlage; the nose is fresh and fruity with fragrances of apple, pear, exotic and citrus fruit; the palate is dominated by freshness and sapidity. Prosecco PDO Spumante Rosé is pale pink, varying in intensity, sparkling, with a fine, persistent perlage; the nose is light and characteristic, rich with delicate and elegant floral notes of acacia and rose and fruity notes of strawberry and raspberry; the flavour reveals fresh, smooth and lively notes, ranging from brut nature to extra dry. Prosecco PDO Spumante wine must be obtained exclusively through natural fermentation in autoclaves, using musts and wines obtained from grapes of the variety indicated in the product specification, with a minimum natural alcohol level of 9% vol. Prosecco PDO Spumante Rosé must be obtained exclusively through natural fermentation in autoclaves, for a period of no less than 60 days, using musts or wines obtained from grapes of the variety indicated in the product specification, with a minimum natural alcohol level of 9% vol. Prosecco PDO Spumante must be put on the market in the following types: brut nature, extra-brut, brut, extra-dry, dry and demi-sec. Prosecco PDO Spumante Rosé must be available as brut nature, extra brut, brut and extra dry. Prosecco PDO Frizzante wine must be obtained exclusively through natural fermentation in the bottle or autoclaves, using musts and wines obtained from grapes of the variety indicated in the product specification, with a minimum natural alcohol level of 9% vol. There may be a film on the wine when it is produced traditionally through fermentation in the bottle; in this case, it is mandatory for the wine to display “rifermentazione in bottiglia” (secondary fermentation in the bottle) on the label. Prosecco PDO Frizzante, Prosecco PDO Spumante and Prosecco PDO Spumante Rosé wines must be released for consumption from January 1st of the year following that of the harvest. However, in the event of particular climatic or market conditions, the Veneto and Friuli Venezia Giulia regions may, following a documented request to the consortium, authorise each type of wine to be released for consumption a maximum of three months before the above-mentioned date.
Geographical and sub-area specifications
The Prosecco PDO can be accompanied by two geographical sub-designations: Prosecco PDO Provincia di Treviso or Prosecco PDO Treviso; Prosecco PDO Provincia di Trieste or Prosecco PDO Trieste or Prosecco PDO Pokrajina Trst o Trst. They can only be used if the batches of wine are produced exclusively from grapes harvested in vineyards situated in the relative province, and the processing and packageing of the product have taken place in the same province.
Additional specifications
Inter-regional PDOs: Prosecco PDO is produced with the same characteristics in the provinces of Gorizia, Pordenone, Trieste and Udine in the Friuli Venezia Giulia region, and the provinces of Belluno, Padua, Treviso, Venice and Vicenza, in the Veneto region, however there can be differences given to the area and the producer’s philosophy. The designation of Prosecco PDO Spumante wines may use the term Millesimato followed by the reference year of the grapes, provided that the product is obtained with at least 85% of the wine of said year. It is mandatory for the designation of Prosecco PDO Spumante Rosé wines to indicate the term Millesimato followed by the harvest year of the grapes on the label.
