Description of product typologies
Pornassio PDO or Ormeasco di Pornassio PDO Rosso is bright ruby red; the nose is dominated by fruity notes of blackberry, blackcurrant and berries and hints of aromatic herbs; it is dry, pleasant and medium-bodied on the palate, with a slightly bitter finish. It can display Superiore on the label. Pornassio PDO or Ormeasco di Pornassio PDO Sciac-trà is coral-pink; the nose bursts with fresh notes of Mediterranean scrub and red fruit; it is dry and harmonious on the palate, with well-balanced tannins. Pornassio PDO or Ormeasco di Pornassio PDO Passito is ruby red to garnet red, varying in depth; the nose is intense and persistent, with evident notes of small ripe fruit and mild spiciness; it is sweet and full, with intense notes embracing the palate. Pornassio PDO or Ormeasco di Pornassio PDO Passito Liquoroso is garnet red, varying in depth; the nose is ample, full and extremely persistent, with decisive fruity and spicy notes; it is sweet, warm and velvety on the palate, with a persistent finish. In order to ensure the characteristic coral-pink colour of Pornassio PDO or Ormeasco di Pornassio PDO Sciac-trà wines, the vinification of the grapes must be carried out with limited contact between the must and the solid parts. Pornassio PDO or Ormeasco di Pornassio PDO Passito and Pornassio PDO or Ormeasco di Pornassio PDO Passito Liquoroso wines must be obtained from grapes originating from the Ormeasco or Dolcetto grape varieties present in the production area; the grapes must have been dried naturally on the vines, on trellises or in suitable environments, without the aid of artificially heated air. Before being released for consumption, Pornassio PDO or Ormeasco di Pornassio PDO wines must be aged for a certain period of time; Pornassio PDO or Ormeasco di Pornassio PDO Rosso and Pornassio PDO or Ormeasco di Pornassio PDO Sciac-trà cannot be released for consumption before March 1st of the year following that in which the grapes were produced; Pornassio PDO or Ormeasco di Pornassio PDO Superiore wines cannot be released for consumption before November 1st of the year following that of the grape harvest; Pornassio PDO or Ormeasco di Pornassio PDO Passito and Pornassio PDO or Ormeasco di Pornassio PDO Passito Liquoroso wines must be aged for 12 months, commencing January 1st of the year following that of the grape harvest. During the ageing period, Pornassio PDO or Ormeasco di Pornassio PDO Rosso Superiore and Pornassio PDO or Ormeasco di Pornassio PDO Passito wines must be matured in oak or chestnut barrels for at least 4 months.
