Description
The Parrina PDO is reserved for the following types of wine: White, Red, Rosé and Vin Santo. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Parrina PDO is within parts of the municipality of Orbetello in the Province of Grosseto, in the Tuscany region.
Description of product typologies
Parrina PDO Bianco is straw-yellow with golden reflections; the nose is delicate and slightly aromatic, with fruity hints of medlar and floral ones of hawthorn flowers; it is sapid and velvety on the palate, with a bitter aftertaste. Parrina PDO Rosso is a rich, intense ruby-red colour; the nose is delicate, with aromas of typical Mediterranean spontaneous plants and fruity notes of blueberry; it is dry, warm, harmonious and velvety on the palate, with a long fruity finish. It can display Riserva on the label if the wine has been aged for a minimum period of 2 years, of which at least one year must be in wooden barrels and at least 3 months in the bottle. The ageing period commences November 1st of the year in which the grapes were produced. Parrina PDO Rosato is vivid pink; the nose displays elegant notes of rose petals and red fruit; it is dry, rounded, fresh, harmonious and pleasantly acidulous on the palate. Parrina PDO Vin Santo is an intense amber colour; the nose offers hints of hazelnut, dates, dried fig, honey and caramel; it is dense, creamy, sapid and mineral on the palate, with faint citrusy hints. The vinification method used for the production of Parrina PDO Vin Santo wine involves the grapes being dried and mashed between December 1st of the year in which the grapes were harvested and March 31st of the following year; the grapes must be partially dried in suitable environments and partial dehydration with the aid of ventilated air is permitted. The storage and ageing of Parrina PDO Vin Santo wines must take place in wooden kegs with a capacity of no more than 3 hectolitres, for a period of at least 2 years; the wine can be released for consumption from November 1st of the third year following that in which the grapes were produced. Parrina PDO Rosso and Parrina PDO Rosato wines cannot be released for consumption before March 1st of the year following that in which the grapes were produced; for Parrina PDO Bianco the date is December 31st of the year in which the grapes were produced.
Grape variety specifications
The Parrina PDO may display the following grape variety specifications. From white grape varieties: min. 85% Vermentino, Chardonnay, Sauvignon, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, with the exception of Moscato Biano, max. 15%. From red grape varieties: min. 85% Sangiovese (incl. Riserva), Merlot, Cabernet Sauvignon, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, with the exception of Aleatico max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. It is mandatory for Parrina PDO Sangiovese Riserva wines to be aged for a minimum of 2 years, of which at least one year must be in wooden barrels and at least 3 months in the bottle. The ageing period commences November 1st of the year in which the grapes were produced. Parrina PDO Sangiovese, Parrina PDO Cabernet Sauvignon and Parrina PDO Merlot wines cannot be released for consumption before March 1st of the year following that of the grape harvest; for Parrina PDO Chardonnay, Parrina PDO Sauvignon and Parrina PDO Vermentino wines the date is December 31st of the year in which the grapes were produced.
