The production area of Paestum PGI is within the territory of numerous municipalities in the Province of Salerno, in the Campania region.
Description of product typologies
Paestum PGI Bianco, alone or with specification of grape variety, is straw-yellow, varying in intensity; the nose offers fragrances of white fleshy fruit and flowers; it is smooth, fruity and balanced on the palate, tending towards sapid-tart. It can also be produced as a semi-sparkling or semi-sweet wine. Paestum PGI Rosso, alone or with specification of grape variety, is ruby-red, varying in intensity; the nose displays aromas of prune, blueberry, clove and pansy; it is dry on the palate, with a tannic vein supported by acidity and a long, persistent fruity finish. It can also be produced as semi-sparkling, semi-sweet or Novello wine. Paestum PGI Rosato, alone or with specification of grape variety, is pink , varying in intensity; notes of dog rose and wisteria emerge on the nose together with characteristic aromas; it is balanced and dry on the palate, with a sapid finish. It can also be produced as semi-sparkling or semi-sweet wine. The colour of Paestum PGI Passito Bianco is characteristic of the grape variety of origin; the nose is intense, floral and fruity; it is well-balanced on the palate, with sweet, harmonious notes. The colour of Paestum PGI Passito Rosso is characteristic of the grape variety of origin; the nose bursts with intense floral and fruity notes; it is supple, sweet and harmonious on the palate.
Grape variety specifications
Paestum PGI wines with the specification of one of the grape varieties suitable for cultivation in the concerned area is reserved for wines obtained from grapes from vineyards on the producer’s land made up of at least 85% of the corresponding varieties. A maximum of 15% of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area can be used, pure or combined, to produce the above-mentioned musts and wines. Paestum PGI wines with specification of grape variety must display the organoleptic properties of the specified grape variety, as well as the specific characteristics indicated for wines of the same colour.
