The Ostuni PDO is reserved for the following types of wine: White; Red (only with specification of grape variety). The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Ostuni PDO is within the entire territory of the municipalities of Ostuni, Carovigno, San Vito dei Normanni and San Michele Salentino, and parts of Brindisi, Latiano and Ceglie Messapica in the Province of Brindisi, in the Apulia region.
Description of product typologies
Ostuni PDO Bianco is intense straw-yellow with faint golden reflections; the nose is fairly intense, mainly revealing fruity notes and delicate hints of peach, together with a few sensations of hawthorn flower; it is dry, fresh and balanced on the palate, with a good persistent finish. The organoleptic properties of Ostuni PDO Rosso wines are typical of the grapes and terroir of origin. The vinification processes must take place within the production area; however, taking traditional circumstances into consideration, these operations may also be carried out within the entire territory of the municipalities, even if only parts of them are within the grape production area.
Grape variety specifications
The Ostuni PDO may display the following grape variety specifications. From red grape varieties: min. 85% Ottavianello, with the possible addition of Negroamaro and/or Notar Domenico and/or Susumaniello and/or Malvasia Nera, max. 15%. Ostuni PDO Susumaniello is cherry-red to soft ruby red; it is delicate on the nose with the typical aromas of the grape; it is dry and harmonious on the palate.
