Description
The Oltrepò Pavese PDO is reserved for the following types of wine: White, Red and Rosé; Spumante, Rosé Spumante, Passito and Liqueur (the latter only with specification of grape variety). The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Oltrepò Pavese PDO is within the hilly area of numerous municipalities in the Province of Pavia, in the Lombardy region.
Description of product typologies
Oltrepò Pavese PDO Bianco is bright, luminous straw-yellow; the nose is fine and fresh, with a very faint fruity aroma of white flowers; the flavour is a full and rounded. Oltrepò Pavese PDO Rosso is intense ruby red with purple reflections; the nose offers fragrances of very ripe red fruit with notes of blackberry, blueberry and hot spices; there is an immediate sensation of sweet ripe fruit on the palate, creamy and dense, with hints of peel leading to a vibrant spicy flavour and a bittersweet almondy finish. It can display Riserva on the label if the wine has been aged for a minimum period of 24 months, commencing November 1st of the year in which the grapes were produced. Oltrepò Pavese PDO Rosato is pink to soft cherry-pink; the nose is slightly vinous and characteristic; it is dry and harmonious on the palate. It can also be produced as semi-sparkling wine. The organoleptic properties of Oltrepò Pavese PDO Spumante, Oltrepò Pavese PDO Spumante Rosé, Oltrepò Pavese PDO Passito and Oltrepò Pavese PDO Liquoroso wines with specification of grape variety are typical of the grapes and terroir of origin.

The Oltrepò Pavese PDO may display the following grape variety specifications. From white grape varieties: Riesling (incl. Riserva, Superiore, Semi-Sparkling, Spumante); min. 85% Riesling and/or Riesling Italico, max. 15% Pinot Nero and/or Pinot Grigio and/or Pinot Bianco. Cortese (incl. Semi-Sparkling, Spumante): min. 85% Cortese, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. Moscato (incl. Semi-Sparkling, Spumante, Passito, Liqueur): min. 85% Moscato Bianco, max. 15% Malvasia di Candia Aromatica. Pinot Nero (white vinified, incl. Semi-Sparkling, Spumante): min. 85% Pinot Nero, max. 15% Pinot Grigio and/or Pinot Bianco and/or Chardonnay. Malvasia (incl. Semi-Sparkling, Spumante): min. 85% Malvasia di Candia Aromatica, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. Chardonnay (incl. Semi-Sparkling, Spumante): min. 85% Chardonnay, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. Sauvignon (incl. Spumante): min. 85% Sauvignon, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. From red grape varieties: min. 85% Cabernet Sauvignon, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. Barbera (incl. Riserva, Semi-Sparkling): min. 85% Barbera, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. Pinot Nero (rosé vinified, incl. Semi-Sparkling, Spumante): min. 85% Pinot Nero, max. 15% Pinot Grigio and/or Pinot Bianco and/or Chardonnay. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Traditional methods of secondary fermentation in autoclaves (Charmat method, locally known as the Martinotti method) must be used to produce Oltrepò Pavese PDO Riesling, Oltrepò Pavese PDO Cortese, Oltrepò Pavese PDO Chardonnay, Oltrepò Pavese PDO Moscato, Oltrepò Pavese PDO Malvasia, Oltrepò Pavese PDO Sauvignon, Oltrepò Pavese PDO Pinot Nero (white vinified) and Oltrepò Pavese PDO Pinot Nero (rosé vinified) sparkling wines. Oltrepò Pavese PDO Barbera and Oltrepò Pavese PDO Riesling Riserva wines must be aged for a minimum period of 24 months, commencing November 1st of the year in which the grapes were produced. Both the dry and sweet versions of Oltrepò Pavese PDO Moscato Liquoroso wine must be made with Moscato must or wine; the drying period for Moscato grapes destined for the production of Oltrepò Pavese PDO Moscato Passito wine must last no longer than March 30th of the year following that of the grape harvest, and the vinification process must be completed by October 15th of the year in which the grapes were produced.
Additional specifications
It is mandatory for the labels of Oltrepò Pavese PDO wines to display both the collective mark and the Oltrepò Pavese designation.
