The production area of Oltrepò Pavese Metodo Classico PDO is within the hilly areas of numerous municipalities in the Province of Pavia, in the Lombardy region.
Description of product typologies
Oltrepò Pavese Metodo Classico PDO is straw-yellow, varying in intensity, and has fine, persistent foam; the nose offers an ample bouquet that is fine and mild; it is fresh, sapid and harmonious on the palate. Oltrepò Pavese Metodo Classico PDO Rosé is pink, varying in intensity, and has fine, persistent foam; the nose is complex, with notes of ripe fruit and bread crust; it is dry, harmonious and medium-bodied on the palate. It can also be produced as Cremant wine. Spumante Oltrepò Pavese Metodo Classico PDO wines must be made exclusively with the traditional method of secondary fermentation in the bottle. Before being released for consumption, Oltrepò Pavese Metodo Classico PDO Spumante wines must have remained on the lees for a minimum period of 15 months; for vintage wines it is 24 months. This period commences on the bottling date, although not before January 1st of the year following that in which the grapes were harvested.
Grape variety specifications
The Oltrepò Pavese Metodo Classico PDO may display the following grape variety specifications. From red grape varieties: min. 85% Pinot Nero (vinified with white or rosé winemaking methods), max. 15% Chardonnay and/or Pinot Grigio and/or Pinot Bianco. Oltrepò Pavese Metodo Classico PDO may display the Pinot Nero grape variety specification (made with white and rosé winemaking methods) when the base wine is composed of at least 85% Pinot Nero, with the remaining 15% made up of Chardonnay and/or Pinot Grigio and/or Pinot Bianco. Oltrepò Pavese Metodo Classico PDO Pinot Nero is straw-yellow with orange reflections and fine, persistent foam; the nose displays an ample bouquet of fresh fruit, white flowers and yeast; it is sapid, well-structured, fresh and harmonious on the palate. Oltrepò Pavese Metodo Classico PDO Pinot Nero Rosé is pink, varying in intensity, and has fine, persistent foam; the nose is ample and intense with fruity aromas and citrusy notes; a note of freshness and the structure stands out on the palate, with intense citrony undertones and a long finish.
Additional specifications
The use of the term “Vino Spumante” cannot be used to identify Oltrepò Pavese Metodo Classico PDO wines. Only the Rosé designation can be used for Oltrepò Pavese Metodo Classico PDO wines that have been vinified with rosé winemaking methods, including Cremant wines. The term “Millesimato” (Vintage) can only be used if the year of the grape harvest is indicated on the label.
