History
The farming of the Oberpfälzer Karpfen PGI boasts a long tradition. In fact, carps have been raised in the ponds of Upper Palatinate for many centuries. At the beginning, they were raised at the Cistercian monastery of Waldsassen, founded in 1132, to then have the strongest diffusion in the 15th century. After alternating development phases, the 20th century witnessed a true rebirth of the activity. Today, the Palatinate has a leading position on a national level regarding this production, thanks to the 3000 companies that practice pisciculture in ponds.
Gastronomy
When the Oberpfälzer Karpfen PGI is fresh, it is recommendable to keep it in a vacuum, in order to avoid fast deterioration of its flesh. During the timeframe between the moment of the catch and the purchase, it should be kept in suitable containers in the cold, at a temperature equalling -25°C. The Oberpfälzer Karpfen PGI is consumed fresh or smoked (also in pieces, such as fillets or steaks). It is suitable for various kinds of preparations, starting from the traditional cooking and stuffed carp, up until a more innovative carp cooked with red wine and butter. The carp soups, on the other hand, lend themselves as tasty appetizers.
