Description of product typologies
Nardò PDO Rosso is ruby red, varying in intensity; the nose displays fragrances of cherry and sour cherry, with notes of cocoa and tobacco; it is velvety on the palate, with good body, offering balanced tannins and a slightly bitter background. It can display Riserva on the label if the wine has been aged for a minimum period of 2 years and released for consumption with a minimum total alcohol level of 12.5% vol. Nardò PDO Rosato is a somewhat bright coral-pink, with variations that can arrive at soft cherry-pink; the nose offers the aromas of the grape, enriched by light balsamic tones and hints of aromatic herbs; it is smooth and fresh on the palate. Traditional vinification methods must be used for the grapes destined for the production of Nardò PDO Rosato wine, which involves the static draining (natural draining induced by gravity) of the pressed grapes after they have been macerated for 12-24 hours.
