The Pantelleria PDO is reserved for the following types of wine: White, Moscato Spumante, Moscato Liqueur, Golden Moscato, Passito Liqueur and Sweet Zibibbo; Moscato di Pantelleria and Passito di Pantelleria.

The production area of Pantelleria PDO is within the entire territory of the island of Pantelleria in the Province of Trapani, in the Sicily region.
Description of product typologies
Pantelleria PDO Bianco is straw-yellow, becoming luminous golden yellow over time; the nose bursts with aromas of sun-bathed daisies and summer fruit, with fresh vegetal undertones; it is intense on the palate, with embracing citrusy sensations which lead to a finish with well-balanced alcohol and acidity. It can be produced as a semi-sparkling wine. Pantelleria PDO Moscato Spumante is straw-yellow with golden reflections and fine, persistent foam; the nose displays hints of vanilla and cinnamon which blend perfectly with the sweetness of marzipan and warm honey; it is sensual on the palate, with hints of candied fruit, orange, bread and croissant leading to an extremely persistent finish. Pantelleria PDO Moscato Liquoroso is yellow, varying in intensity; its fragrances and flavour are typical of Moscato. Pantelleria PDO Moscato Dorato is golden yellow, varying in intensity; the nose is pleasant and aromatic; its flavour is typical of Moscato. Pantelleria PDO Passito Liquoroso is golden yellow, varying in intensity and tending towards amber; the nose is intense and typical of Moscato; it is velvety and sweet on the palate. Pantelleria PDO Zibibbo Dolce is golden yellow, varying in intensity; the nose is pleasant and aromatic; its flavour is typical of Moscato. Moscato di Pantelleria PDO ranges from yellow to amber; the nose bursts with a rich bouquet of varietal fragrances given to the moscato, accompanied by white flowers, honey, apricot, candied citron and vanillary notes; it is sweet, smooth and intense on the palate, full-bodied, with strong hints of honey, candied orange peel and marzipan, all of which can be tasted in the long, persistent finish. Passito di Pantelleria PDO is golden yellow to amber; the nose bursts with intense aromas of ripe yellow fruit and sunflowers, combined with baked pastries and evident undertones of dried figs and honey-based cakes; it is initially embracing on the palate, with spicy notes of cinnamon and a citrusy sensation that creates freshness in the persistent finish. Pantelleria PDO Moscato Liquoroso wine must be obtained through the fermentation of fresh grape must. Passito di Pantelleria PDO Liquoroso wine must be produced with grapes that have been entirely or partially dried naturally or in air-conditioned environments. The above-mentioned wines cannot be enriched in any way, aside from the mandatory addition of alcohol produced through winemaking, which must be done during or after fermentation; the addition of raisins with a maximum sugar concentration of 60% is permitted for Passito PDO Liquoroso wine. Pantelleria PDO Passito Liquoroso wine cannot be released for consumption before February 1st of the year following that of the grape harvest. The vinification, drying and alcoholisation of liqueur wines must be carried out on the island of Pantelleria; the gasification processes must be carried out within the Sicily region. Moscato di Pantelleria PDO and Passito di Pantelleria PDO wines must be bottled within the vinification area. Moscato di Pantelleria PDO wine must be obtained through the fermentation of fresh grape must. Passito di Pantelleria PDO must be produced with sun-dried grapes. The grapes can be protected from weather conditions. The must or wine cannot be enriched in any way, aside from the possible addition of sun-dried grapes with a maximum sugar concentration of 60%, even after November 30th of each year. Passito di Pantelleria PDO cannot be released for consumption before July 1st of the year following that in which the grapes were produced.

ON the label of Passito di Pantelleria wines, the traditional term Passito must precede the designation, together with the preposition "di". On the label of Pantelleria PDO wines, Moscato Liquoroso, Moscato Spumante, Moscato Dorato, Passito Liquoroso, Zibibbo Dolce, Bianco and Frizzante must be written underneath the Protected Designation of Origin. The wording “vino ottenuto da uve appassite al sole” (wine obtained from sun-dried grapes) is permitted on the label of Passito di Pantelleria wines.
