The Designation also incorporates numerous grape variety specifications.

Modena PDO or di Modena PDO Rosato Frizzante is pink and has lively, effervescent foam; the nose displays spring fragrances which blend smoothly with a fragrant hint of red apple; fruity sensations blend on the palate with the harmony and freshness of the body. Modena PDO or di Modena PDO Spumante Bianco is straw-yellow, varying in intensity, and has delicate, persistent foam; the nose is delicate and fragrant, with wafts of fruity notes and vanillary aromas; it is dry and sweet on the palate, with hints of yeast and fresh bread crust. Modena PDO or di Modena PDO Lambrusco Novello Frizzante ranges from ruby red to garnet red, varying in intensity, and has lively, effervescent foam; the nose is vinous and intense with fruity notes of berries; it is sapid, sharp and harmonious on the palate, with a persistent flavour bursting with hints of raspberry and strawberry. Modena PDO or di Modena PDO Spumante and Frizzante wines must be obtained through natural fermentation/secondary fermentation in the bottle or through natural fermentation/secondary fermentation in autoclaves.
Grape variety specifications
The Modena PDO or di Modena PDO may display the following grape variety specifications. From red grape varieties: min. 85% Lambrusco (Lambrusco Grasparossa, Lambrusco Salamino, Lambrusco di Sorbara, Lambrusco Marani, Lambrusco Maestri, Lambrusco Montericco, Lambrusco Oliva, Lambrusco a Foglia Frastagliata), individually or combined; the addition of grapes from the Ancellotta, Malbo Gentile and Fortana grape varieties is permitted, individually or combined, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin.
Additional specifications
Modena PDO or di Modena PDO rosé wines must display the specification “Rosato” on the label. Spumante Rosato wines may display the specification “Rosé” as an alternative.
