Production Method
The olive gathering has to take place directly from the tree, preferably by hand or with combs, avoiding damage to the fruits. The olives that have fallen on the ground are not used. Transportation takes place with bags made of natural material, which have a capacity of 30-50 kg, or in plastic boxes. The healthy fruits are selected for the pressing, eliminating all foreign bodies. This procedure should take place within three days of the gathering. Classic and centrifuge machinery is used and the temperature should not exceed 30°C during the processing.
Appearance and Flavour
The extra-virgin olive oil Lygourio Asklipiiou PDO has a green-yellow colour with an average viscosity. It has a pleasant taste and a fruity aroma, which recalls the fresh fruit. With time, the taste turns bitter and spicy.
