Production Method
A fine, smooth paste is prepared from all the raw materials; the mixture is then stuffed into casings approximately 35-50 cm long. The product is then hung on rods which are placed in a smoke-room, where they are dried and smoked using warm smoke. The smoked salami is then cooked at a temperature of 75-78°C, after which they are cooled with cold water. The product is packaged in vacuum or controlled-atmosphere packs.
Appearance and Flavour
Liptovská Saláma-Liptovský Salám TSG has a distinctive taste due to the use of herbs and spices such as mace, nutmeg, and ginger, and to the light smoking. The product is also characterised by the homogeneous appearance of the cut surface, its elastic consistency and the fact that is easy to slice. It is meaty-pink in colour.
History
The origins of this product date back to 1956, when workers at the meat-producing plant at Dubnica nad Váhom attempted to make a salami that was different from the finely ground cooked meat products produced at the time. They replaced some of the pork fat with pork off cuts and the product was processed to a fine texture rather than the coarse texture that was normal at the time. The result was liptovská saláma (liptovský salám), which is known and produced throughout the Czech and Slovakian territory. At the start of the 1970s, the unique recipe for Liptovská saláma or Liptovský salám TSG was created by the plant's research department.
Gastronomy
The product should be kept in a cool place away from heat sources. Once cut it can be kept in the refrigerator for several days. Liptovská Saláma-Liptovský Salám TSG is ideally eaten sliced and served on bread. It is also delicious as a filling in meat rolls.
