Description of product typologies
Lessini Durello PDO or Durello Lessini PDO Spumante is bright yellow and has a fine, persistent perlage; the nose offers full and complex notes of medlar and acacia, with traces of vanilla and a background of bread; it is medium-bodied on the palate, with a good balance between acidity, minerality and structure, leading to a persistent finish. It can display Riserva on the label. According to tradition, there may be a film on Lessini Durello PDO or Durello Lessini PDO Spumante wines, in which case it is mandatory for the wine to display “rifermentazione in bottiglia” (secondary fermentation in the bottle) on the label. Lessini Durello PDO or Durello Lessini PDO Spumante wines must be obtained exclusively through natural fermentation in autoclaves and can be put on the market as extra brut, brut, extra-dry, dry and demi-sec; Lessini Durello PDO or Durello Lessini PDO Spumante Riserva must be obtained exclusively through secondary fermentation in the bottle according to the Metodo Classico, remaining on the lees for at least 36 months. This period commences on the tirage date and nevertheless not before January 1st of the year following that of the grape harvest.
