The production area of Lapin Puikula PDO is in the Lapland province in northern Finland.
Production Method
It is a typical product of Finland that can be only cultivated in the northern regions characterized by particular climatic conditions. Authorised Lapin Puikula seed tubers are used to produce these potatoes. These tubers are grown in a suitable Centre. The cultivation is carried out in the open field and one of its characteristics is its strong resistance against disease.
Appearance and Flavour
The Lapin Puikula PDO has an oval, elongated shape, yellowish-whitecoloured, consistent pulp, and a distinct taste.
History
The history of Lapin Puikula PDO is tied to Finnish potato production, a centuries-old tradition. Especially cold atmospheric conditions, above all in the northern areas of the country, allow this late variety to grow without being subject to pest attacks.
Gastronomy
The Lapin Puikula PDO must be kept in a cool, ventilated and partially lit place, avoiding both complete darkness and full light to prevent it from germinating. It must be consumed cooked. The Lapin Puikula PDO is a potato that can be used in the same way as any other. However, due to its very high starch content it cooks faster than others. The tasty combination of Lapin Puikula PDO and mushrooms, cooked with white and black peppers, is not to be missed. Also, Lapin Puikula PDO is traditionally served with reindeer stew and jam.
