Lambrusco Salamino di Santa Croce PDO Rosato Frizzante is pink, varying in intensity, and has lively foam; the nose is characteristic and pleasantly fruity; it is bone dry or dry, medium-sweet or medium-dry, soft and harmonious on the palate, and intensely sapid and fresh. Lambrusco Salamino di Santa Croce PDO Spumante Rosso is ruby red or garnet red, varying in intensity, and has lively foam; the nose is ample, complex and rich with floral notes; it is bone dry or dry, medium-sweet or medium-dry, soft and harmonious on the palate, and intensely sapid and fresh. Lambrusco Salamino di Santa Croce PDO Spumante Rosato is pink, varying intensity, and has lively, evanescent foam; the nose is pleasant, fine, ample and rich with floral aromas; it is bone dry or dry, medium-sweet or medium-dry, soft and harmonious on the palate, with notes of sapidity and freshness. Lambrusco Salamino di Santa Croce PDO Spumante and Lambrusco Salamino di Santa Croce PDO Frizzante wines must be obtained by natural fermentation/secondary fermentation in the bottle or natural fermentation/secondary fermentation in autoclaves. The vinification and production processes of sparkling and semi-sparkling wines must take place within the territory of the Province of Modena.

It is mandatory for Lambrusco Salamino di Santa Croce PDO Frizzante and Lambrusco Salamino di Santa Croce PDO Spumante wines to indicate the residual sugar content on the label. Lambrusco Salamino di Santa Croce PDO Frizzante and Lambrusco Salamino di Santa Croce PDO Spumante rosé wines must display “Rosato” on the label.
