Production Area
The production area of the table olives Konservolia Artas PGI is within the administrative boundaries of the municipal areas of Peta, Komboti, Grammenitsa, Vlama, Sykies, Sellades, Makryniada, and Kommeno, in the prefecture of Artas, in the Epirus region.
Production Method
The olives are cultivated on grounds that are generously watered by frequent rains of the region and submitted to periodic fertilizing with nitrogen. After manual gathering, the fruits are transferred to the processing plant the same day, and submitted to quality control and grading. They are then placed in plastic tubs (with a maximum capacity of 10 l) with pickle for fermentation, which lasts 20 to 60 days for green olives and four to five months for yellow and black olives. Transportation takes place in plastic crates of 20-25 kg. The fight against the olive fly is done with the spraying of baits from the soil, using biologic methods, or without any treatment.
Appearance and Flavour
The Konservolia Artas PGI is a table olive of average size (its weight varies from 4 gr to 12 gr), with a green, yellow or black colour, according to the level of ripeness.
History
