Description
The Karlovarský Suchar PGI is currently produced in two varieties: the Karlovarský Suchar Special and Karlovarský Suchar Dietní. They are obtained with a mixture of wheat flour, Karlovy Vary thermal spring water, drinking water, flour, sugar, solid vegetable fat, yeast and cooking salt. Dried egg yolk, Karlovy Vary thermal spring salt are also added to prepare the Karlovarský Suchar Special.
Production Area
The production area of Karlovarský Suchar PGI includes the municipalities of Karlovy Vary, Semnice, Kyselka, Velichov, Ostrov, Hroznetín, Mezirolí and Stará Role of the district of Karlovy Vary (Okres Karlovy Vary) in the region of Karlovy Vary.
Production Method
After the raw materials are measured, the individual ingredients are blended with warm water in dough with firm consistency. After the dough is left to settle, it is scaled into small portions, which are formed into French-loaf shapes and are left to ferment. After rising, the loaves are placed in uncovered tins in a steamed peel oven, where they are baked. After baking, the Karlovarský Suchar PGI are turned out of their tins and loaded on to the proper trolleys to cool. They are then divided into small portions and placed on a toasting belt. After cooling, the portions are wrapped in aluminium foil with protective paper.
Appearance and Flavour
The Karlovarský Suchar PGI have a regular shape corresponding to the tin in which the product was baked. They are well dried, powdered, porous and well baked. They are golden-brown but not dark. They have a refined taste and pleasant sweet aroma like dry biscuits.
History
This product is the result of a stable traditional production method which has been used for decades and is still being practised today. The strong link between Karlovarský Suchar and Karlovy Vary is evident from the name of the product.

Karlovarský Suchar PGI is kept in a fresh and dry place. They are delicious biscuits to be consumed as a snack or dessert.
Marketing
The product is sold as Karlovarský Suchar PGI in two types: Karlovarský Suchar Special and Karlovarský Suchar Dietní. It is marketed in printed cartons with a weight of 200 gr, which are then packed into large cardboard boxes.
