The production area of I Terreni di Sanseverino PDO is within the territory of the municipality of San Severino Marche in the Province of Macerata, in The Marches region.
Description of product typologies
I Terreni di Sanseverino PDO Rosso is fairly deep ruby red to crimson; the nose lingers on a good repertoire of aromatic herbs and fresh vegetal notes, with evident sensations of sour cherry and rosemary; the palate is in good keeping with the nose, mineral and with fairly intense sapidity. It can display Superiore on the label. I Terreni di Sanseverino PDO Rosso Passito is light ruby red to garnet red; the nose is intense and rich with notes of honey and baked fruit; it is mellow, fresh and long-lasting on the palate. For the production of I Terreni di Sanseverino PDO Rosso Passito wine the grape drying processes may take place on the vines and/or in suitable environments after harvesting; the drying period can last up until March 31st of the year following that in which the grapes were produced, and vinification must in any case be completed by December 1st of the year in which the grapes were harvested. Fermentation and maturing must take place in wooden recipients with a maximum capacity of 500 litres and last for at least two years. Before being released for consumption, I Terreni di Sanseverino PDO Rosso wines must have undergone an ageing period of at least 18 months, commencing December 1st of the year in which the grapes were produced; for I Terreni di Sanseverino PDO Rosso Superiore and I Terreni di Sanseverino PDO Rosso Passito the minimum period is 24 months.
Grape variety specifications
The I Terreni di Sanseverino PDO may display the following grape variety specifications. From red grape varieties: I Terreni di Sanseverino PDO Moro, min. 60% Montepulciano, pure or with the addition of similarly-coloured unaromatic grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 40%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Before being released for consumption, I Terreni di Sanseverino PDO Moro wines must have undergone a minimum ageing period of 18 months, commencing December 1st of the year following that in which the grapes were produced.
