Description of product typologies
Grignolino del Monferrato Casalese PDO is ruby red, varying in intensity, tending towards orangey-red; the nose is delicate and slightly aromatic with evident hints of rose and apricot, with rich characteristic fruity notes determined by the limestone and alkaline properties of the soil; the palate is dry, slightly tannic and pleasantly bitter, with a characteristic aftertaste. It can display Riserva on the label if it has undergone a minimum mandatoryageing period of at least 30 months, commencing November 1st of the year the grapes were produced in, at least 18 months of which must be in wooden barrels. Grignolino del Monferrato Casalese PDO Rosso Riserva is garnet-ruby red, tending towards orangey-red; the nose is characteristic, delicate with spicy notes; it is dry, slightly tannic, and pleasantly bitter on the palate, with a characteristic aftertaste. Grapes destined for the vinification of Grignolino del Monferrato Casalese PDO wines must ensure a minimum natural alcohol level of 11.5% vol., and 12% vol. for the Riserva. The vinification processes must be carried out within the delimited production area, although considering the circumstances of traditional production these operations may also be carried out within the entire territory of the municipality of Alessandria, and it is the faculty of the Ministry to allow the vinification processes to also take place in the bordering provinces, providing they are in the Piedmont region and that said practice was traditionally used by the producers on the date the product specification entered into force.
