Description of product typologies
Grignolino d’Asti PDO is ruby red, varying in intensity and acquiring orange hues with ageing; the nose is delicate with notes of small red fruit and brushwood, which are often accompanied by characteristic hints of white pepper; it is austere and polished on the palate, dry due to the typical presence of tannins, with a pleasant almondy finish. Grapes destined for the vinification of Grignolino d’Asti PDO wines must ensure a minimum natural alcohol level of 10.5% vol. The vinification processes of Grignolino d’Asti PDO wines must be carried out within the territory of the municipalities in the production area, although considering the circumstances of traditional production, these operations may also be carried out within the entire territory of the Province of Asti.
