Description
The Greußener Salami PGI is a sausage product obtained with pork and natural aromatic herbs. The meat is exclusively from pigs bred in the production area.
Production Area
The production area of the Greußener Salami PGI is the small city of Greussen, 35 km away from Erfurt, surrounded on the north by the mountainous spur of the region and on the south by the Thuringian Forest, in the mild climate of the federal state of Thuringia.
Production Method
The pork is cut in pieces and then minced. Pepper and natural aromatic herbs are added and the blend obtained is accurately mixed to then be put inside a natural casing and submitted to the smoking process. Once smoked, the product is left to mature for a long period, equalling roughly eight weeks, until a slightly peppered aroma develops.
Appearance and Flavour
The Greußener Salami PGI has a fairly thin and long shape and is characterised by a peppered, sharp flavour.
History
This product is the result of an antique tradition - the name Greußener Salami was already coined in 1864 - and had a noteworthy diffusion with the fall of the German Democratic Republic. A new development phase of the production started in 1999, when an enterprising group of workers took over the Greussener company struck by a heavy crisis and relaunched the production. Today, thanks to successful research and development activity, the Greußener Salami PGI represents a perfect match between traditional processing methods and the most innovative productive technologies, which make this product appreciated and acknowledged worldwide for its characteristic taste.
Gastronomy
The Greußener Salami PGI is preserved well in cool and dry places, preferably in the refrigerator, at a temperature of roughly 7°C. It is enjoyed fresh, and is perfect on its own, diced, served with a good glass of wine. Yet, it is also appreciated as ingredient in various recipes, such as dumplings, potato pie and the Greußener Salami PGI with broccoli sauce.
Marketing
The product is sold as Greußener Salami PGI. It is marketed whole, in pieces or sliced, in packs of 80 gr, 100 gr and 200 gr.
