Production Area
The production area of Frascati Superiore PDO is within the entire territory of the municipalities of Frascati, Grottaferrata, Monte Porzio Catone, and parts of Rome and Montecompatri, in the Province of Rome, in the Lazio region.
Description of product typologies
Frascati Superiore PDO is straw-yellow, varying in intensity and at times tending towards golden green; the nose offers notes of jasmine and peach flowers, exotic fruit and chamomile; the aromas of the nose return on the palate, supported by good minerality. It may display Riserva on the label if the wine has undergone a minimum maturing period of 12 months, commencing November 1st of the year in which the grapes were harvested, of which at least three months must be maturing in the bottle. The vinification processes must be carried out exclusively within the production area of the grapes, although considering local needs related to urbanisation and the safeguarding of existing local traditions, these operations may also be carried out in parts of the municipality of Montecompatri. Grapes destined for the production of Frascati Superiore PDO wine must ensure a minimum natural alcohol level of 11.5% vol.
