Production Area
The production area of Frascati PDO is within the entire territory of the municipalities of Frascati, Grottaferrata, Monte Porzio Catone, and parts of Rome and Montecompatri, in the Province of Rome, in the Lazio region.
Description of product typologies
Frascati PDO Bianco is straw-yellow, at times with greenish reflections; the nose offers fragrances of Sambuca and Williams pear, which finish with traces of minerals; it is fresh, pleasantly sapid and very persistent on the palate. Frascati PDO Spumante is pale straw-yellow with a fine and persistent perlage; the nose is vinous, fine and characteristic; in the Brut and Extra-dry wines, it is harmonious, sapid, smooth, light and velvety on the palate. The vinification processes must be carried out exclusively within the production area of the grapes, although considering local needs related to urbanisation and the safeguarding of existing local traditions, these operations may also be carried out in parts of the municipality of Montecompatri; the gasification can be carried out within the entire territory of the Province of Rome. Grapes destined for the production of Frascati PDO wine must ensure a minimum natural alcohol level of 11% vol. and 10% vol. for Spumante.
