Description of product typologies
Fara PDO is intense ruby-red in colour; the nose offers floral fragrances suggesting pansy and violet, followed by fruits of the forest, blackcurrant jam and cloves; it is dry and sapid on the palate, with delicate sensations of liqueur fruit, mineral notes and a tannic flavour. It can display Riserva on the label. Fara PDO must undergo a mandatory ageing period of 22 months (34 for Riserva wines), 12 months of which must be in wood (20 for Riserva), commencing November 1st of the year in which the grapes were produced. Fara PDO cannot be released for consumption before September 1st of the second year following that in which the grapes were produced, whereas for Fara PDO Riserva it is from September 1st of the third year following that in which the grapes were harvested.
