The production area of Elba Aleatico Passito PDO or Aleatico Passito dell’Elba PDO is within the entire territory of the municipalities of the Island of Elba, in the Province of Livorno, in the Tuscany region.
Description of product typologies
Elba Aleatico Passito PDO or Aleatico Passito dell’Elba PDO is deep ruby-red in colour, at times with purplish reflectionsand tending towards garnet with ageing; the nose bursts with notes of dried fruits, jam and wild blackberries, with a delicate note of rose; it is smooth, rounded and warm on the palate, with notable persistence. After careful selection, the grapes must be dried outside or in suitable areas for a minimum of 10 days, with the possibility of partial dehydration with ventilated and/or dehumidified air, until the sugar content has reached a minimum of 30%. The wine can be released for consumption from March 1st of the year following that in which the grapes were produced. The drying, vinification, preservation, maturing and bottling processes must be carried out within the production area. Bottling must take place within the production area in order to safeguard the quality of the Passito, as sea-transport of bulk quantities of wine can bring about chemical-biological mutations which alter the organoleptic properties.
